The green olives of the Chalkidiki & Amfissa variety thrive in central and northern Greece. After the winter harvest by hand, the bitter substances are traditionally extracted from the olives in barrels with salt water for months before they are pitted in the factory and lovingly filled into returnable glass jars. Without vinegar or acidifiers!
