How to preserve food properly

Many foods can be preserved by boiling them. This means that fruit and vegetables, as well as sauces, soups, bread and ready meals, can be kept for much longer. Germs are killed during the cooking process. When the jars cool down, a vacuum is created which prevents new germs from entering. This means that food can be kept for up to several years.

What is needed for preserving?


First of all, you need preserving jars in the right size - these must be sterile. A funnel for filling is also important so that the rim stays clean. You also need rubber rings to seal the jars, as well as clamps to keep the lid and jar tightly closed. However, there are often jars that are designed for preserving and already contain all of this.

That's how it works!

1. Disinfect everything. Then only touch the outside of the glass and everything else only with tongs or gloves.

2. Prepare the food that is to be preserved. Wash everything thoroughly and, if necessary, peel, core and cut into the desired size.

3. Fill the jars with food and top up with sugar, salt or vinegar water, depending on your taste. Wipe the edges of the jars clean and seal everything.

4. Place a folded tea towel in the bottom of the pot to compensate for any excessive temperature differences between the bottom and the jars. Place the jars on top, leaving some space between them.

5. Fill the pot with hot water until the jars are about three-quarters full. Heat everything slowly.

6. As soon as the water boils, put the lid on the pot and simmer with the lid closed for between 10 and 90 minutes, depending on the dish. The time varies greatly and should be researched again each time.

7. Then let the pot cool down for at least 10 minutes. Carefully check whether a vacuum has developed. The lids of the screw-top jars must no longer give way and must remain tightly closed even without the retaining clips.

A great way to preserve food that would otherwise go bad - and, as a bonus, you always have a tasty treat in your cupboard.
